Paneer tikka is a popular Indian appetizer that consists of marinated and grilled cubes of paneer (Indian cottage cheese) along with vegetables. It’s a delicious and flavorful dish that’s perfect for your vlog. Here’s a recipe for paneer tikka:

Ingredients:

For the Marinade:

  • 250 grams of paneer (cottage cheese), cut into cubes
  • 1/2 cup thick yogurt
  • 2 tablespoons gram flour (besan)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon lemon juice
  • 2 tablespoons oil
  • Salt to taste

For the Tika Skewers:

  • Bell peppers (red, green, and yellow), cut into cubes
  • Onion, cut into cubes
  • Tomatoes, cut into cubes
  • Wooden skewers (soaked in water for 30 minutes to prevent burning)

For Basting:

  • 2 tablespoons melted butter or oil

For Garnish:

  • Fresh coriander leaves
  • Lemon wedges

Instructions:

  1. In a mixing bowl, combine all the ingredients for the marinade – yogurt, gram flour, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, garam masala, lemon juice, oil, and salt. Mix well to form a smooth paste.
  2. Add the paneer cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours to allow the flavors to meld. You can marinate it overnight for even better results.
  3. Preheat your grill or oven to 200°C (392°F). If you’re using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated paneer cubes, bell pepper, onion, and tomato onto the skewers, alternating the ingredients to create colorful skewers.
  5. Brush the skewers with melted butter or oil.
  6. Place the skewers on the preheated grill or in the oven and cook for about 15-20 minutes or until the paneer and vegetables are charred and cooked through. You can also use a stovetop griddle or a grill pan for cooking.
  7. While grilling, turn the skewers and baste them with more butter or oil to keep them moist and flavorful.
  8. Once done, remove the paneer tikka skewers from the grill or oven.
  9. Garnish with fresh coriander leaves and serve hot with lemon wedges. You can also sprinkle some chaat masala for extra flavor.
  10. Enjoy your delicious paneer tikka as an appetizer or snack. It’s best served with mint chutney or tamarind chutney.
